Liquid Glucose

Liquid Glucose is a viscous syrup.

Glucose syrup is a viscous syrup often used in icing, confections, and pulled sugar work. It is a simple sugar produced from starches extracted from wheat, potatoes, rice, corn, and sweet potatoes. The starches are broken down in water with the help of enzymes. Glucose helps prevent the re-crystallisation of sugar and adds elasticity and gloss to products. The sweetness of glucose varies between 50-75% of the sweetness of sucrose. 


Product Usage: Use in sorbet, ganache, mousse, candies, pastries & icing.
