Daniel Alvarez - Viennoiserie

Daniel Álvarez is one of the protagonists of viennoiserie.

 

Savour has invited Daniel to teach 2 exclusive classes in all aspects of Viennoiserie. Whatever the day, whatever the season, there’s a reason why customers queue outside Daniel’s Atelier, Dalua, in Spain. We’re giving you a glimpse of Daniel’s world of dough, so you can experience his hallmark creations from the master himself.

 

Over 3 days, you’ll learn hands-on about croissants, panettone, millefeuille, Danish brioche, kouign amann, brioche, inverted puff pastry, doughnuts, rum baba, chaussons au pommes, cremadets, schneckens, braids, cinnamon rolls and much more. Daniel will explain the theory behind the components and methods, including yeast and fermentation, right through to cooking.

 

It’s an extensive class covering all aspects of Viennoiserie and the ultimate opportunity to explore his craft – don’t miss out!

 

Please note, Daniel will be assisted by a translator for the class.

You must wear closed-toe shoes and a chef jacket.
