Panning

Panning is predicted by many to be the next big thing in patisserie and chocolate. Now you can learn it here at Savour Chocolate & Patisserie School.

What is panning you ask? Panning is an art form in itself to coat a crunchy centre, such as a nut, with even layers of chocolate and finishing it with a mirror shine.

Much like the French Macaron there are plenty of tips and tricks you need to know to ensure a successful final product.

WHAT YOU WILL LEARN

Savour’s panning classes will focus on successful chocolate coating on a range of products including coffee beans, puffed quinoa, almonds, pistachios, hazelnuts and caramels, all with exceptionally shiny finishes.

FLAVOURS YOU MAY CREATE*

Here is an example of some of the products made with a panning machine.

- Chocolate coated nuts
- Jelly beans
- Smarties
- M&M’s
- Jaffas
- Maltesers
- Crispearls
- Bullets
- 100’s and 1000’s

* Flavours subject to change.
* All products in the photos have previously been made by our students in class

FREQUENTLY ASKED QUESTIONS

Do I need a Panning Machine to replicate these products at home?

Yes. For commercial use, if you want to pan several kilograms of products you can buy a commercial panning machine. For home use or smaller quantities of product, it is possible to buy a panning attachment for home-use stand mixers.
