Bean to Bar

Learn everything you need to know to create chocolate from start to finish in our cocoa bean to chocolate bar classes.

Savour has sourced beans from the top growing regions around the world for our brand new Bean to Bar class, developed by award-winning pastry chef Paul Kennedy. This class will enable you to understand the process and theory of making chocolate and increase your knowledge of chocolate flavour profiles.

Now days, people are becoming increasingly concerned about where their food is sourced and the processes it undergoes prior to consumption. By creating your own chocolate bars, you will be able to fully control the process, the flavours and additives, to create your own unique couverture.

WHAT YOU WILL LEARN
- Cocoa bean selection and storage
- Roasting
- Winnowing
- Grinding
- Conching
- Micron size
- Inclusion of sugars and milk powders

After your extensive 3 day hands-on class with Paul Kennedy you will take home your own original bars of couverture!

The region of cocoa beans you use in class will vary, and is based on the cocoa bean growing season and their availability around the world.
